EASY BAKED TURKEY/ HAM
One fresh 12-15 lb. turkey
Covered roasting pan
Turkey rack
“BIG DADDY’S SEASONING & BBQ RUB
Two quarts boiling water
Two large onions, 1 whole and 1 diced
Two large green bell peppers diced
Two tablespoons minced garlic
Two cups sliced mushrooms
¼ cup real butter or olive oil
One large orange cut in half
Best time to start this about two hours before bedtime.
Preheat oven to 475°
Wash turkey and dry well. Rub with the butter or the oil. This is your choice: I sprinkle well with BIG DADDY’S BBQ RUB and rub it in, then sprinkle with BIG DADDY’S seasoning Mild or Sizzling. Place on rack in roasting pan. Place both halves of orange in cavity of turkey and place whole onion in cavity with it. Place diced onion, bell peppers, garlic and mushrooms in bottom of pan with 2 tablespoons seasoning Mild or Sizzling. When oven is up to 475° and water is boiling pour water into pan (not over turkey) place lid on and put in oven close the door, DO NOT OPEN THE DOOR AGAIN, For a turkey this size cook for 1 ½ hours, turn off oven and go to bed. (Let it cook for about 8 or 9 hours) In the morning you will have a golden brown turkey and lots of broth for your dressing. For a larger turkey 15-18 lbs cook for about 2 hours
For Ham:
I like a lot of rub on the ham. Use cherry juice and pineapple juice in place of butter or olive oil, lots of rub. Use the veggies and they can be used to make gravy. After the rub has been put on turkey place some cherries and slices of pineapple on ham hold in place with toothpicks. (BTW don’t try to insert the whole onion and orange just cut’em up and put in pan) cook same as above for size of ham. You can cook the broth down to make a great gravy.
