In an effort to make the flavor unique he began searching for a seasoning that not only tasted great, but also smelled great. Since there wasn't anything on the market like the seasoning blend he was looking for, Dwight began mixing and blending on his own.

After years of testing different blends, he found one that was a hit with everyone who tried it.

As a matter of fact, it turned out that Dwight's new seasoning was good not just on steak, but on just about everything.

Encouraged by the response of his family and friends, "Big Daddy's Seasoning for All Things" brand was born in late 2004. (Dwight chose the name Big Daddy because that's what his thirteen grandchildren and two great grandchildren call him.)

"Big Daddy's" went into production with one product -  "Big Daddy's Mild Seasoning for All Things", quickly followed by the spicy version "Big Daddy's Sizzling Seasoning For All Things".  By 2006 Dwight had added five more products: "Big Daddy's Habanero Hot Sauce", "Big Daddy's Jalapeno Hot Sauce", "Big Daddy's Smokey Bar-B-Que Rub" and "Big Daddy's Gourmet Fish Fry", made from rice grown in Louisiana along with "Big Daddy's"Gourmet popcorn rice, it has a butter popcorn aroma and taste, both are very heart healthy. Because there are no MSG's in any of "Big Daddy's" products, and the fact that they're 33% lower in sodium than the leading competitors, they've proven to be a big hit with health conscious cooks and restaurants.

Although Hurricane Katrina impacted growth projections, "Big Daddy's" unique flavor and taste are quickly becoming the favorite seasoning and sauces throughout Louisiana, Alabama, Texas and Mississippi. From nine stores in late 2005 to ninty plus stores, nine restruants and cateres in late 2008 and, "Big Daddy's" is still strong and growing, shipping to twenty one states and Canada.

"Big Daddy" intents to add seven new products to the list in the near future, including the long ask for Jamblaya Mix meal, crawfish boil and the pre-seasoned Red Beans and Rice meal. Plus the ask for recipe book that has a host of recipes for wild game..
