"BIG DADDY'S"

FRIED ALLIGATOR
STEP ONE: FIRST YOU GOT TO CATCH THAT THING.
CAREFUL, THEY DON'T LIKE THEIR TAIL MESSED WITH!!
THEN YOU SLICE YOU OFF THREE LBS OF TAIL.
YOU MIGHT AS WELL, WHILE YOU GOT IT DOWN SO
YOU DON'T HAVE TO FIGHT IT AGAIN GET YOU A

ALLIGATOR BALLS

3 lbs. alligator meat, sliced into strips 2 x 4 inches

3 cups milk

1 ½ cups Red Wine

1 cup Mustard

2 TBS minced garlic

2 TBS onion, finely diced

2 TBS Big Daddy's hot sauce (habanero or jalpeno)

2 cups fish fry

2 TBS Big Daddy's seasoning Mild or Sizzling

1 cup pancake mix

Cooking oil

Combine fish fry, pancake mix and seasoning in one bowl. In another bowl, combine hot sauce, garlic, onion, wine, mustard and milk. Do this a couple of days ahead for better taste. Let set in fridge.

Marinate the gator meat strips in the liquid mixture for 2 hours or longer.(longer the better. Heat your cooking oil in a deep oil fryer to 375°. Coat the gator meat in the fish fry mixture and fry for about 6 minutes or until golden brown. Dipping Sauce, mix this a couple of days ahead.

1 cup ketchup

1 TBS Big Daddy's hot sauce, ¼ cup mustard

1 tsp. horseradish, 1 tsp. mayo.

Jalapeno Hot Sauce

Habanero Hot Sauce
