Big Daddy'sŪ Seasoning Recipes

"BIG DADDY'S"
FAVORITE RECIPES
ALLIGATOR BALLS
YOU REMEMBER HOW HARD IT WAS TO
GET THAT TAIL, DON'T
you WISH YOU had GOT MORE
WHILE YOU WAS AT IT.

2 lbs. alligator meat, ground

2 2/3 cups flour

2 tsp. Baking powder

2 tsp. Big Daddy's seasoning Mild or Sizzling.

2/3 cup milk

2 eggs, beaten

1 TBS minced garlic

1 TBS minced onion

1 tsp. Big Daddy's hot sauce Habanero or Jalapeno

Cooking oil and deep fryer

 

In large bowl, mix flour, baking powder, seasoning. Then add milk, eggs, garlic and onion to the bowl and mix well. Add ground gator meat to mixture, distributing batter into meat. Roll mixture into 1-inch balls, you should have about 32 balls. Place them on a cookie sheet, cover them and chill for 2 hours.

Heat deep fryer to 375° . Drop in gator balls and cook about 4 minutes or until golden brown. Serve with one my dips, and rice and gravy, recipes in the book.
