Big Daddy's® Seasoning Recipes

BLACKENED CHICKEN BREAST

 

4 boneless, skinless chicken breasts, washed and dried  

¼ cup butter

1 cup chicken broth                                                       

1 cup mushrooms, sliced

½ cup green onions, diced with tops                              

1 tbsp. minced garlic

2 tbsps. flour                                                                  

¼ cup bell peppers, diced

You need two skillets for this, one deep and one shallow. In shallow skillet melt 1 tbsp. butter on high heat.  At the same time set the deep skillet on low heat and melt the rest of butter.  Roll breast in melted butter from deep skillet. Coat chicken breast heavily on both sides with seasoning and move to shallow skillet.  Cook breast on high heat until golden brown, about 5 minutes for each side. In the deep skillet, on high heat, add chicken broth and flour.  Stir in onions, mushrooms and garlic. Lower heat and add chicken. Simmer until chicken is tender.  Serves 4.  Tastes great served with ‘BIG DADDY’S CAJUN RICE. Recipe included in the book.
