“BIG DADDY’S”
FAVORITE RECIPES
CAJUN DIRTY RICE
With Livers-n-Gizzards
1 cup “Big Daddy’s” Gourmet Rice
3 tbsps. flour
3 tbsps. butter
1 large onion chopped
1 large bell pepper chopped
˝ cup chopped celery
2 tsps. minced garlic
˝ cup chopped parsley
1 tbsp. “Big Daddy’s” seasoning, Mild or Sizzling
8 ozs. cleaned chicken livers chopped finely
8 ozs. cleaned chicken gizzards chopped finely
In a boiler bring 2 cups of water to boil. Add rice and simmer for 45 minutes, or until rice is tender. Meanwhile, in a skillet, melt butter and add flour. Cook over medium heat for 15 minutes until flour is dark brown. Stir in seasoning, onion, pepper, celery and garlic. Cook until onion is clear. Stir liver and gizzards into mixture and cook covered for 10-12 minutes, until meat is done and tender. Blend in rice and parsley. Serve immediately. Serves 10
